My Vietnam with Mary Aregoni

Vietnam has become one of the most talked-about destinations in travel right now, and for good reason. It's a country where history, geography, and food are inseparable, offering a range few places this size can match.

As chef and owner of Saigon Sisters in Chicago, I wanted to create the itinerary I would give to friends who would ask me where to eat and what to see, so they could understand Vietnamese food the way I do.

Twelve days move through the three regions that define the cuisine: Hanoi and Halong Bay in the north, Hoi An in the center, Saigon and the Mekong Delta in the south. The trip opens with a welcome dinner from a Michelin-starred chef, setting the tone for what follows. From there, the experiences are hands-on: a guided walk through Hanoi's Old Quarter street food scene, a private cooking class at a home outside Hoi An, two nights aboard a Lan Ha Bay cruise, a day on the Mekong Delta by traditional sampan. Restaurants were chosen for what they represent regionally, from a standout kitchen in Hoi An to a colonial-era villa in the delta.

If you are traveling from the US, the flight time is around 24 hours total, typically arriving in Tbilisi in the small hours of your second day of travel (early check-in at the hotel is included), therefore your departure flight may need to be two days before the tour starts.)
